Kutya

Kut'ya ( kutya, kutia, )is a a sweet grain pudding, a component of the Russia, Ukrainian and Belarus Christmas Eve menu. This is the first dish in the traditional twelve-dish Christmas Eve supper in Russia and the main a meal of 12 meatless dishes in Ukraine and 12 . It is traditionally made of wheat kernels, but in some countries and in modern tradition is quite often made of rice. Kutya is generally served cold.

Ingredients:

  • 250 ml (1 cup) wheat berries, cleaned and picked over
  • 1.5 -2 liters water
  • 60 ml honey dissolved in 125 ml boiling water
  • 100 g poppyseed
  • 100 g chopped walnuts
  • Preparation.

    Wash the cracked wheat berries (kernels) in cold water and soak overnight. The next day, bring 6 to 8 cups of water to a boil with a pinch of salt and simmer the wheat for 3 to 4 hours, until the kernels burst and the liquid has thickened. Meanwhile, scald the poppy seed and drain it, add honey, put this mass to the wheat mixture and simmer for 3 to 5 minutes more. Add chopped walnuts in the end. Raisins and other dried fruit can be added to taste. Serve cold.
